Mandi - Founder of Rainbow Sugarcraft

Mandi has been a Wedding Cake Maker and Decorator for over thirty years having been taught by her Grandmothers, Lavinia and Hilda Mary.   Lavinia was an exceptional cake maker and baker and Hilda a fine craftswoman and expert at Royal Icing techniques.

Mandi has developed a fascination with producing delicate, realistic flowers and foliage in sugarcraft and also loves making comic novelty characters, as personalised bride and groom cake toppers.

Mandi's favourite cake is Ginger Pecan, a deliciously moist Wedding Cake recipe, laced with Green Ginger Wine and packed with toasted pecan nuts.
